almond & goji bars
When it comes to making healthy snacks, I love the excuse to fill them with as much goodness as I can. That way in such a small snack - I know I'm giving my body and skin loads of benefits.
These bars are perfect for that. They are filled with goji berries, nuts, seeds and other superfoods that are truly delicious.
Chewy, sweet and wholesome, they'll definitely be your new go-to! They're super quick and easy to make and the best part is you can always alter the recipe with nuts and seeds of your choice and get creative with it! Theres no right or wrong!
INGREDIENTS:
1 cup almonds
1 cup pepitas
1 cup oats
2/3 cup desicated coconut
1/3 cacao nibs
1/3 goji berries
1/3 dried cranberries
3/4 almond butter
1/3 macadamia or coconut oil
1/3 cup local honey
1 tablespoon hemp seeds
2 teaspoons ground cinnamon
METHOD:
Preheat oven to 160 degrees.
Combine all of the ingredients in a mixing bowl and stir all together.
Place mixture in a food processor and roughly blend it leaving it chunky and imperfect.
Line a baking tray with some grease proof paper and place mixture in the tray. (My tray was 24cmx24cm)
Press down firmly and spread tightly to the edges.
Bake for around 30 minutes or until lightly brown on top. (You may need to cover with foil if it browns too quick)
Cut into desired portions and enjoy!
